Eggs in Russian
These deviled eggs in Germany are called "Russian" (russische Eier). Can be found in the ancient culinary reference 1845 the famous Henriette Davidis. The yolk of hard-boiled eggs mixed with greens, smoked or pickled fish, capers. Eggs are often decorated with red (and black) caviar – hence perhaps the name.
